Cauliflower Cheesy “Potatoes”

Sometimes, you just want something cheesy and ooey gooey as a side to your steak, chicken or even salad! Nothing beats the deliciousness of cheesy potatoes to cure that need. Sadly, potatoes are super high in carbs. Obviously, this is not fitting for those of us following the ketogenic lifestyle. Thankfully, God made cauliflower; a delightful little veggie that is a perfect substitute for a lot of things potato!



This recipe will satisfy your need for cheese and potatoes, without actually using the starchy nonsense you’ve hopefully left in your previous life! Grab a head of cauliflower and get in your kitchen to make some of this for your next meal. Better yet, make it at your next family gathering so your non-keto brood can get a great side that will remind them how awesome the keto way of eating can taste!

Instructions
  1. Preheat oven to 375 degrees
  2. Bring salted pot of water to a boil
  3. Add cauliflower to boiling water and cook just until tender. Drain well and set aside
  4. In a different pan, heat the heavy cream until simmering
  5. Whisk cream cheese and mustard in to heavy cream until smooth
  6. Stir in shredded cheese, salt, pepper and garlic until cheese is melted
  7. Add cauliflower and cooked bacon (optional) and stir until well coated. Transfer to buttered baking dish and top with remaining cheese
  8. Bake 15-20 minutes, until golden and bubbly
  9. Enjoy!

Depending on the size of the cauliflower head, this recipe will be approximately 6 net carbs per serving.
